Lightly smoked but big in flavour
All of our fish is hand cured in a sweet brine of brown sugar, dark rum and Dead Sea salt. We then hang our fish in our stone kiln, where it is gently smoked using a mixture of oak whisky barrel chips, larch and ash. No electric kilns are used here, just pure aromatic woodsmoke and a gentle west coast breeze to help keep the woodchips smouldering.
All of our salmon that we smoke here at Sleepy Hollow are hand reared by Loch Duart, a sustainable and environmentally friendly source. They were the first independent salmon farm to be awarded the RSPCA Freedom Food Award.
We are passionate about fantastic Smoked Salmon, our ethos here at Sleepy Hollow is to be able to smoke fish that comes from a sustainable source and also one that ensures the protection of this wild and wonderful environment, here in the North West of Scotland.
